Improvement of Antifungal and Antibacterial Activities from Extracts Or Phenolic Compounds Obtained from Winery By-Products by Structural Modification Or Combination with Antibiotics

Objetivo general

El objetivo general de este proyecto fue la optimización en la obtención de extractos obtenidos a partir de residuos orujo de uva y su uso como antifúngico para el control del hongo fitopatógeno Botrytis cinerea, así como la evaluación del efecto antibacteriano contra bacterias Gram positivas y negativas.

Objetivos específicos

1.-To optimize the extraction of phenolic compounds from grape pomace using hydrolytic enzymes. 2.-To characterize the phenolic profile in each extract by HPLC chromatography. 3.-To determine of antifungal and antibacterial activity of extracts. 4.- To modify the most active extract by using the oxidative enzyme laccase and chitosan. 5.- To modify phenolic compounds identified in objective 2 by using the laccase and chitosan or laccase and nitrogenous substrates. 6.- To determine the antifungal activity against B. cinerea of extracts and phenolic compounds modified. 7.- To evaluate the mechanism of action of phenolic compounds modified with chitosan o nitrogenous substrates against B. cinerea. 8.- To evaluate synergistic interactions between antibiotics used in treatments against multiresistant bacteria and active extracts or pure compounds present in grape pomace. 9.- To determine the effect of extracts or pure compounds on efflux pumps and the lactamase activity in multi-drug resistant bacteria or lactamase inhibition.
